Cooking for Busy Bloggers - Ham in Coca Cola
I like to cook. Well, actually, I like to eat more than I like to cook.
But it gets so busy around here that we’re forever eating either take-out or frozen entrees.
I’m turning over a new leaf, though. So I bought a slow cooker and a book of slow cooker recipes. For some reason, I seem to think that will do the trick. We’ll have to see about that.
In the meantime, though, I’ve pulled out a stash of recipes that I’ve actually used in the past which are quick and easy. And right now, I’m cooking Ham in Coca Cola.
This is a recipe I got out of Nigella Lawson’s cookbook, How to Eat (great cookbook, no, make that amazing cookbook, especially if you like to read cookbooks.)
All you need is a mild-cured ham, a 2 litre bottle of coke (it doesn’t have to be brand name Coke, but it can’t be diet. And I don’t have a clue what 2 litres translates into, in imperial measurements. Sorry). And one onion.
All you do is put the ham in a pot, pour the coke in, cut the onion in half and put it in there, then get it boiling. When it starts boiling, turn the heat down low, and simmer for about 3 hours.
That’s it!
It sounds yucky but it actually tastes good (and kids love it), and it’s very very easy.
To make it a little harder, Nigella takes it out after 2 and a half hours and does some sort of glaze magic with it in the oven, but our fire alarm is perilously close to the oven and anything smoky sends it into red alert. So I just go with the simmer on the stove method all the way.
The great thing is, you get a lot of blogging done in those three hours.
